Mini Quiche Recipe – #JourneytoHealth

Mini Quiche



1 yellow or red pepper diced

18 cherry tomatoes halved

Handful of spinach chopped

4 TBSP goat or feta cheese

6 whole eggs

8 egg whites

1 tsp Italian seasoning

Salt/pepper to taste



Preheat over to 350 and spray 12 muffin pan with pam

Evenly divide peppers, tomatoes, spinach and cheese between 12 muffin cups

In a bowl mix eggs, egg whites and seasonings

Pour egg mixture evenly over veggies

Bake for 24-28 mins (the mini quiches will rise while cooking but will settle as they cool)
